If you have not tried cherry chip cake mix and it is available in your area--don't laugh, for the first 6 years we lived in Houston I couldn't find it there and had to have it imported fro SLC--give it a shot. I think you will be pleasantly surprised.
I was actually first introduced to Cherry Chip by the Hansen's. It must have been early on in our dating because--you guessed it--our wedding cake was cherry chip!
So, here in Idaho they don't have rules about Birthday treats and/or treats made from home, so Rachel requested that I make ice cream cone cupcakes for her class. My mom used to make these for us when I was a kid. I always loved it. Somehow, though, my mom's always looked perfect and mine all look like Mt. Vesuvius just erupted. I have tried many different approaches, but with the same results...and to make matters worse this time...I don't know how to use my oven here. It is a convection oven and quite frankly I don't know how to "convect". My mother-in-law suggested reading the owner's manual, which is a fantastic idea, except for that I forget how much I hate the oven until whatever I've put in there is ruined...maybe she could read it for me and highlight the important parts?? ;)
So, I hope I don't humiliate my daughter with my lack of baking skills. I think she'll be fine.

Girl. OUr top oven is a convection oven (and the bottom is regular so I can compare). The only difference with the convection is that it bakes a bit faster and you can put things on multiple racks because it bakes more evenly. I love mine. It automatically sets itself for 25 degrees less than you enter to account for the convection...but other than that it works the same. Maybe you have a malfunction. Is Boise high altitude?
Use google, much easier than reading the owners manual. I don't know why it would be easier, just seems like it. I am sure the cupcakes are delicious. I must admit I have never had cherry chip cake. I just don't bake as long in the convection oven. I usually cut the time by 25 percent from what the recipes calls for and have had luck.
I'm not a convection pro, so I'm sorry but I can't help you there...but I do LOVE cherry chip cake & think those cupcakes look (and sound delicious).

I love cherry chip cake! We make it all the time here. Try it with chocalta icing, sounds weird, but good!
