Call me Betty (or Becky) Crocker

Tonight's menu included Tomato Basil Soup and Pumpkin Muffins. Thought I'd share the recipes. I think the soup is as good or better than La Madeline's. ENJOY!

Tomato Basil Soup

2 cloves garlic
1 T olive oil
2 large cans crushed tomatoes
1 package fresh basil (chopped)
1 package smoked gouda cheese (grated)
1 pint heavy cream

Heat olive oil until hot over medium heat add garlic and brown. Add the crushed tomatoes, about 1-2 cups of water and basil. Bring to a boil then add grated gouda cheese. Simmer for 20 minutes. Just before serving add the heavy cream and stir well.

Pumpkin Muffins

3 eggs

2 1/2 C. sugar
1/2 C. oil
1/2 C. applesauce

3 tsp. vanilla
1 C. chocolate chips (optional)
2 C. pumpkin
3 C. flour
1 tsp. soda
1/2 tsp. salt
3 tsp. cinnamon

Mix all ingredients together. Pour into muffin tins. Bake at 350 for 20-25 minutes.

That sounds so good! I'm going to get some gouda and cream. mmmmmmmmm. I think that muffin recipe is diana banta's or sueann wake's from a ward recipe booklet. they are good!
